Super Simple Tomato Sauce

Prep Time: 5 Minutes

Cooking Time: 55 Minutes

Ingredients:

  • 1 Medium Yellow Onion
    2 Cloves Garlic
    6 or 7 Roma Tomatoes
    Extra Virgin Olive Oil
    2 Tablespoons Sugar
    Basil to taste, fresh or dried
    Coarse Sea Salt, to taste
    Cracked Black Pepper, to taste
    Crushed Red Pepper, to taste
    ½ to ¾ cups Red Wine

Directions

1. Add about 2 tablespoons extra virgin olive oil to pot at medium-low heat.
2. Dice onion and garlic, add to pot.
3. Remove stems from tomatoes and cut in half, horizontally.
4. Once onions are translucent (about 5 minutes) add tomatoes with cut side down.


5. Tomatoes will begin releasing their water into the pot. Now is a good time to add the salt, pepper, and dried basil. If you’re using fresh basil, wait until the last step.

After about 15 minutes mash tomatoes, skins and all, stir in sugar and continue to reduce for another 15 minutes until you have a loose paste.

6. Add ½ to ¾ cup red wine to de-glaze bottom of pot. Reduce at low heat for 15 to 20 minutes, until paste thickens.


7. Remove from heat and add 2 to 3 tablespoons of extra virgin olive oil and fresh basil, if desired. Serve warm over spaghetti.
